Tonight for the potluck I went to, I made a Cheesy Potato Hotdish. I get this continuously, and it is essentially based off of – but no longer truly – the Hotdish of the same name my aunt Sheila feeble to get for practically every family gathering. I wasn’t going to blog about it, but I had one friend request me for the recipe, and so I’m operating a blog about it in the end, lol!
I took two 3-lb baggage of organic red russet potatoes, 1 bulb of organic garlic plus a couple of cloves, and a few medium organic yellow onions. I chopped all of the potatoes into chunks, and tossed them in my steamer. I liberally salted the potatoes with Real Salt and peeled the cloves of garlic. I gash the cloves up, but I become no longer desirous about how big they had been, and tossed them on top of the potatoes. Then I sliced the onions and tossed them on top of the potatoes as correctly.
My steamer has two baskets, and I derive the garlic and onions on the bigger basket, as I handiest want them on half of the potatoes, but I will have easily derive them on top of each and every baskets, or if I had boiled the potatoes, tossed them correct into the water. I added a small bit more salt, turned my steamer on, and let that tag it is component while I started on the leisure of the dish. NOTE: If steaming the leisure, get SURE you build water in the steamer sooner than you switch it on, lol, as I forgot, and it delayed me by a beefy 1/2 hour!
As the potatoes had been steaming, I gash up into tiny chunks about half of a 2-lb brick of Land-O-Lakes American Cheese, on story of it melts correctly and is a worthy better different than Velveeta. I will have feeble cheddar or a combination if I had wished, and shopping for shredded cheese can put time lowering it up, lol! I tossed the cheese into my Roaster Oven with about 2 cups of cream and a few sticks of generic organic unsalted butter. I turned the roaster on low to let it melt and meld collectively, and will must have added some salt, but did no longer on story of I figured I had derive loads on the potatoes. I will have added seasonings at this tag.
I took two “ring bologna.” One become truly a smoked sausage, and the opposite a mildly spicy Kielbasa. I gash each and every into tiny chunks, and space aside.
When the potatoes had been accomplished steaming – which I did on story of it is sooner (equipped you take note so to add water when turning it on!) and slightly more nutritious – I took the half with the garlic and onions on top, and tossed them in the roaster with the cheese/cream/butter mix, and using my handheld mixer, made something very love mashed potatoes out of it. Here is the “sauce” and might per chance well even be as thick or as skinny as you’d like it.
I added the sausage and other half of the potatoes, and stirred them up, and made up our minds that it become a bit on the thick aspect, so the final component I did become employ a couple of of the water from the steamer’s “drip pan” to skinny the hotdish out a bit. I feeble the water from the drip pan on story of that is entirely juice from the garlic and onions plus salt and whatnot that has dripped off of the steaming vegetables. It affords the hotdish flavor with out having so to add more seasonings, and prevents me from losing the seasonings I already feeble.
Once it become all stirred collectively, I unplugged it, and introduced it to the pot luck. I purposely made loads on story of I knew that there might per chance be always plenty of of us, but after I had feeble appropriate half of the ingredients – 1 gain of potatoes, 1 cup of cream, 1 stick of butter, etc. – it might probably probably per chance had been excellent for a family dinner.
Own a joyful day, and whilst you are attempting my recipe, please let me know the intention it appears, thanks!
